TERRA Restaurant at Tottington Manor was named BRAVO 2025 Sustainability Champion by Restaurants Brighton, placing first in a category recognising restaurants, pubs and cafés making sustainability a meaningful part of the way they operate.
What the 2025 award recognised
The BRAVO Awards are Restaurants Brighton's annual public-vote awards covering restaurants and hospitality businesses across Brighton, Hove and Sussex. In the Sustainability Champions category, participating venues also complete a sustainability checklist, adding a practical assessment of how sustainability is being approached within the business.
TERRA finished first in the 2025 Sustainability Champions ranking. For us, the award mattered because sustainability at Tottington Manor is not intended to sit separately from the guest experience. It runs through the food we buy, the suppliers we work with, the wines we serve, the way the building operates and our position within the South Downs National Park.
Sussex produce is central to TERRA
TERRA's menus are built around seasonal produce and a strong relationship with Sussex growers, farms, vineyards and food producers. Keeping more of the supply chain close to home supports local businesses while also helping guests understand where their food and drink comes from.
The same thinking extends to the wine list, with a particularly strong selection of Sussex wines alongside carefully chosen wines from established regions around the world. Our team also visits producers and vineyards to understand their methods and stories rather than treating wine as simply another product on a list.
Sustainability beyond the menu
Food sourcing is only part of the story. Across Tottington Manor we have been working on energy efficiency, electrification of kitchen equipment, efficient refrigeration and lighting, smart heating controls, waste separation, reducing single-use plastics and monitoring how operational choices affect the wider business.
Our location makes that especially relevant. Tottington Manor sits at the foot of the South Downs, so protecting the landscape guests come here to enjoy is closely connected with the long-term success of the hotel and restaurant.

And what happened in the 2026 BRAVOs?
The 2026 results provide a useful follow-up rather than making the 2025 award a one-off headline. Restaurants Brighton's 2026 Sustainability Champions list placed TERRA at Tottington Manor 9th among the Top 20 sustainable venues in Brighton, Hove and Sussex.
The Real Junk Food Project took first place in 2026. TERRA's continued Top 20 position gives us a useful benchmark: the challenge is not simply to have won once, but to keep improving the practical work behind the recognition.
Restaurants Brighton continues to recognise TERRA's sustainability work
Restaurants Brighton's current TERRA profile still identifies the restaurant as a BRAVO winner and highlights its commitment to Sussex produce and sustainability. TERRA also remains included in Restaurants Brighton's sustainable restaurant coverage for Brighton, Hove and Sussex.
