When Sussex Exclusive visited TERRA Restaurant at Tottington Manor, the review did more than describe a meal. What Sussex Exclusive found at TERRA
Sussex Exclusive begins with the setting: Tottington Manor sits at the foot of the South Downs near Henfield, with countryside views and a quieter atmosphere than diners might expect so close to Brighton, Worthing and the Sussex coast.
The review then focuses on the restaurant's local approach. It highlights Sussex ingredients, fish landed at Newhaven, South Downs lamb, local butchers, local vegetables and Sussex-made products, alongside house-made pickles, oils and other accompaniments. The drinks list follows the same thinking, with Sussex wines, beers and spirits forming an important part of the offer.
The dishes in the review — and why the menu keeps moving
The Sussex Exclusive visit included dishes such as Sussex cheese soufflé, South Downs lamb, Sussex pork, local cheeses and seasonal desserts. Those dishes are useful as a snapshot of TERRA's style, but not as a promise that the same plate will be on the menu today.
TERRA's current approach is deliberately seasonal. The kitchen works with the produce available at the time, which means ingredients, garnishes and complete dishes change through the year. From the restaurant into the TERRA Tasting Room
For guests who want the kitchen to take the lead, the TERRA Tasting Room offers a more focused version of the experience. The private room sits just off the main restaurant and is designed for around six to eight guests.
Guests can choose a five- or seven-course seasonal tasting menu, with an optional wine flight. Because the dishes are prepared specifically for the booking, the Tasting Room asks for 36 hours' notice.
The menu is not intended to be a fixed list repeated month after month. It is planned around seasonal ingredients available at the time, allowing the kitchen to build a sequence of courses around the produce rather than forcing ingredients into a predetermined menu.
Sussex produce is still at the centre of the story
OpenTable currently describes TERRA as farm-to-table and records the restaurant's commitment to sourcing 90% of ingredients and 25% of wine from Sussex, much of it from within roughly 20 miles of Tottington Manor.
That local focus is one of the reasons the Sussex Exclusive review remains relevant even as individual dishes change.
