A wine list rooted in Sussex and curious about the world. Local sparkling wine, bottles discovered on our travels, a wide choice by the glass and a team that would rather help you find something you love than tell you what you ought to drink.

Our wine philosophy

Local first. Open-minded always.

Our list is developed with local wine supplier Burgundy Wines and evolves alongside the seasonal food at TERRA. Sussex has a particularly important place on it, while the rest of the list travels through France, Italy, Spain and far beyond.

Our current wine list includes an extensive selection available by the glass as well as by the bottle. That matters to us: a guest can try a local Sussex wine with one course, move to a completely different region with the next, or taste a glass before deciding whether to enjoy the bottle.

Our wine preservation system allows us to keep a broad range of wines in excellent condition after opening. It means we can offer more interesting wines by the glass — including premium and local choices — rather than forcing every good bottle into a bottle-only list.

Ask the team for a recommendation, try something unfamiliar or begin with a Sussex wine and decide from there. Wine should make a meal more enjoyable, not more intimidating.

Wine grown in the landscape around us.

Sussex is not a token local section on our list. It is one of the foundations of it. We regularly visit vineyards, meet producers and learn how the geology, climate, grape varieties and winemaking choices shape the wine that eventually reaches your table.

Ridgeview Wine Estate in Ditchling is around five miles from Tottington Manor and is one of the best-known names in English sparkling wine. Ridgeview is included throughout our South Downs Wedding Packages, making a local Sussex toast part of the celebration.

Our team can help match a glass or bottle to a dish, whether you are having a relaxed lunch, private dinner or a longer tasting menu. The point is not to turn dinner into a lesson; it is to help you find combinations that make both the food and wine more enjoyable.

In the TERRA Tasting Room, the seasonal tasting menu can be accompanied by an optional paired wine flight, giving the kitchen and front-of-house team the chance to build a complete food-and-wine journey.

How the list keeps moving

We go looking for the story behind the bottle.

A wine list should not be static. We taste regularly with Burgundy Wines, visit Sussex vineyards and make time each year to explore a European wine region in person.

Those visits help the team understand more than grape varieties and tasting notes. We see the landscape, cellars and vineyards, talk to people producing the wine and return with a better sense of why a bottle tastes as it does — and where it might belong on the TERRA list.

2025 research trip

Bordeaux, France

Our 2025 visit explored Bordeaux and its winemaking culture. Bordeaux wines now sit alongside Burgundy, Rhône, Loire and Champagne within our French selection.

2026 research trip

Rioja, Spain

In 2026 we travelled through Rioja, learning more about the region and producers behind a style that is strongly represented on our current red and white list.

That same curiosity happens much closer to home. Sussex vineyard visits give our team a deeper understanding of producers whose wines we serve every week — knowledge that can then be shared naturally at the table.

Useful things to know before you order.

Can I order wine by the glass?

Yes. Our wine preservation system lets us offer a broad selection by the glass so you can explore the list without ordering a whole bottle.

Do you serve Sussex wine?

Very much so. Sussex is one of the strongest sections of our list, including still and sparkling wines from producers such as Ridgeview, Albourne Estate, Bolney Wine Estate, Everflyht and Poynings Grange.

Can somebody recommend a wine for my meal?

Yes. Speak to the TERRA team and we can suggest wines to accompany individual dishes, a whole meal or a private dining menu.

Is there a wine flight with the tasting menu?

The TERRA Tasting Room offers an optional paired wine flight alongside the seasonal tasting menu.

Does the wine list change?

Yes. We regularly taste new wines with Burgundy Wines and review the list alongside our changing seasonal menus, local vineyard visits and annual wine-region research trips.
