Afternoon tea has travelled a long way from its nineteenth-century beginnings. What started as a discreet late-afternoon refreshment became a social ritual of sandwiches, warm scones and cakes. Today, it remains one of the loveliest ways to make time for people: unhurried, generous and shared. At Tottington Manor, that tradition is brought to the table with fresh preparation, Sussex ingredients, Hoogly tea and a view that changes with the season.
A tradition with a story
Afternoon tea is generally traced to Anna, the seventh Duchess of Bedford, who is said to have asked for tea, bread and butter, and cake in the late afternoon during the 1840s. The custom soon became a sociable occasion in its own right.

A pause between lunch and dinner
In early Victorian homes, the evening meal was often served much later than it is now. That left a rather hungry stretch between lunch and dinner. The solution was modest at first: a tray of tea, bread and butter, and a little cake. As friends were invited to join, the pause became a ceremony.
By the later nineteenth century, afternoon tea had become a recognised social occasion. The familiar order took shape for good reason: savoury sandwiches first, warm scones with jam and cream next, then cakes and pastries. The sequence gives an afternoon a gentle rhythm, while the pot in the middle of the table gives everyone a reason to linger.

Why afternoon tea became an experience
The enduring appeal is not simply a three-tier stand. It is permission to slow down. Tea is poured, a warm scone is split, and the conversation carries on without anyone watching the clock. The food is deliberately shareable, which is why the occasion suits everything from a long-overdue catch-up to a birthday, anniversary, baby shower or family gathering.
Modern afternoon tea is more flexible than its Victorian predecessor. There are seasonal savouries, patisserie-led sweet courses, sparkling wine for a celebration and thoughtful provision for dietary requirements. The fundamentals still count, though: carefully made food, properly brewed tea, warm hospitality and a setting that makes the time feel special.
Afternoon tea at Tottington Manor
At Tottington Manor, afternoon tea is prepared to order by the AA Rosette TERRA Restaurant chefs. Finger sandwiches, savoury bites, freshly baked scones and sweet treats are made with care rather than simply assembled. Most ingredients are sourced from across Sussex where possible, and the menu moves with the seasons. That fresh approach is also why we ask guests to book at least 48 hours ahead.
The setting gives the ritual its own character. In winter, the Olive Lounge and its real wood fires offer a welcome place to settle after a South Downs walk. In warmer weather, the decking and grounds open the view across the South Downs, turning tea into a relaxed countryside afternoon. The lounge is dog-friendly too, so a well-earned pause need not always mean leaving the dog behind.

Starting with a proper pot of tea
Tea should be more than an afterthought to the cakes. Our afternoon tea is served with a choice from Hoogly, whose teas are made with whole-leaf ingredients. The current tea menu offers familiar black teas, including English Breakfast and Earl Grey, alongside green, fruit and herbal choices, so guests can choose something traditional, refreshing or caffeine-free to suit the moment. The team will be happy to guide you through the current selection when you book or arrive.
For those who prefer coffee, Nespresso is available. For an occasion that calls for a little more ceremony, guests can add Sussex sparkling wine, Champagne or Prosecco by the glass or bottle. It is the same ritual, simply made personal.
The details that make the difference
There is an art to making an afternoon tea feel generous without becoming fussy. The scones should arrive warm; the savoury and sweet elements should have their own identity; dietary requirements should be discussed thoughtfully in advance; and the welcome should make people feel comfortable enough to take their time. That is the kind of relaxed, prepared hospitality we care about at Tottington Manor.
It is also why afternoon tea works so well for a day out in the South Downs. It can follow a walk, anchor a family visit, begin a celebration or sit alongside a night away at the Manor. SquareMeal has included TERRA Restaurant in its guide to the best afternoon teas in West Sussex, recognising the appeal of a countryside setting where classic tradition meets a more contemporary, carefully prepared approach.
